Any advice please on how the Stratos Keel sails with the keel raised for navigating shallow water.

I don't have a keel version so can only comment with the obvious.
More likely to fall over in a breeze and will be blown downwind if it hasn't.

More difficult would be dealing with the rudder if it's dug in and the boat is swinging. Do you have an auto release downhaul cleat on the tiller?
If it's risen be ready for the extra effort to steer.
